EXECUTIVE CHEF BRIAN ARMSTRONG APPOINTED

Michael Musarra, General Manager of The Fairmont Dallas, is pleased to announce the appointment of Brian Armstrong as the hotel’s Executive Chef.
Most recently, Chef Armstrong served as Executive Sous Chef at The Fairmont Scottsdale Princess, a AAA Five Diamond luxury property in Scottsdale, Arizona. Previously, Chef Armstrong held progressive culinary positions at The Fairmont Royal York as Sous Chef and at Fairmont Château Lake Louise as Executive Sous Chef.

Over the course of his 20-year culinary career, Chef Armstrong has developed a culinary philosophy devoted to fresh, sustainable ingredients and an instinctive sense of balance. This ideology makes Chef Armstrong a natural fit at The Fairmont Dallas, where he will oversee all kitchen operations for The Pyramid Restaurant & Bar and hotel catering.
Born in Ottawa, Chef Armstrong discovered his love of cooking at an early age. As a young boy, he became captivated by the process of experimenting with new ingredients and cooking techniques. Pursuing his interest in the culinary field, Chef Armstrong attended George Brown College in Toronto, where he graduated with honors from the Advanced Apprenticeship program. He achieved the designation of Certified Chef de Cuisine from Humber College in Toronto.
Chef Armstrong will be responsible for menu creation and execution in The Pyramid Restaurant & Bar and all hotel food outlets. He plans to approach the new menus by refining familiar seasonal flavors to develop an elevated, authentically local dining experience. Fresh ingredients will hail from the 3,000-square-foot garden located on the hotel’s rooftop terrace where herbs, spices and numerous fruits and vegetables are tended to daily by Chef Armstrong and the hotel’s culinary team.
Sustainable, locally sourced ingredients will be featured in Chef Armstrong’s culinary offerings and he is actively establishing relationships with purveyors and farmers. “We have an opportunity to support global sustainability efforts by taking note of where food is sourced,” said Armstrong. “High-quality ingredients are uniquely pleasing to the palate, and educating ourselves can have a tremendous impact on future generations.”
