Executive Chef Kamal Silva
Kamal Silva is the Executive Chef at The Fairmont Empress in Victoria, British Columbia.
Silva’s culinary experience has spanned over 19 years in five countries and includes various culinary roles in leading hospitality companies. Sri Lankan born, Kamal Silva was a determined young chef with a passion to shine like the desert sun. With early posts in Bahrain and Oman beginning in July 1998, Kamal honed his craft to work with leading hotels with monikers such as World’s Best Airport and Business Hotels.
HIS CALL TO FAIRMONT
When Fairmont Hotels & Resorts called to open The Fairmont Dubai in December 2001, Kamal took the challenge to successfully lead a team with the set-up and implementation of the hotel’s banquet kitchen. With a taste of Fairmont’s management and leadership and an opportunity to develop his culinary skills in North America, Kamal accepted a position with The Fairmont Jasper Park Lodge in September 2003 to fulfill a dream of working in the Canadian Rockies.
The mountains would call Kamal again to next take up a post with The Fairmont Chateau Whistler in May 2005 where he would be responsible for the Resort’s only Four Diamond rated restaurant, The Wildflower.
Due to his expansive background in the United Arab Emirates, Kamal returned to The Fairmont Dubai in January 2006 to accept the role of Executive Sous Chef for the 270-seat Spectrum on One restaurant, featuring eight interactive kitchens specializing in six influential cuisines. Featuring a raw bar, walk-in wine cellar and four private dining rooms, Kamal oversaw and reinforced the highest culinary standards in addition to earning the hotel 17 Emirates International Salon Culinaire Competition awards, including the coveted ‘Chef of the Year’ title. Kamal’s career flourished in this role as he would be promoted to Senior Executive Sous Chef where he was responsible for the 100+ culinary brigade and stewarding operation. The lure of Canada once again prevailed and would bring Kamal back as Executive Chef for The Fairmont Vancouver Airport in May 2008.

Kamal joins The Fairmont Empress in April 2011 and oversees the largest resort, conference centre and quintessential Victoria hotel operation. World renowned for curry in The Bengal Lounge, Afternoon Tea and hosting kings, queens and celebrities, The Fairmont Empress is one of the world's most recognizable hotels. His years of leading multinational culinary brigades to maintain standards of excellence in food quality and presentation serve him well in this internationally savvy market.
Kamal embraces local and regional authenticity in his hotel restaurant’s offerings by partnering with nearby organizations focused on driving sustainable culinary operations.
He reinforced the high culinary standards synonymous with multi award-winning restaurants resulting in the recent accolades at the 2007 Time Out Restaurant awards, including ‘Highly Commendable Friday Brunch’ and ‘Best Global Cuisine’. He also led his team in the 2007 Emirates International Salon Culinaire Competition, which earned the hotel 17 awards, including the coveted ‘Chef of the Year’.
Silva holds a Culinary Diploma in International Cookery from Asia Lanka Vacation Education School in Sri Lanka. He is a leader and coach for the Emirates Culinary Guild.
