The complete remodel of our signature restaurant, Kō, is underway!
The Details: Renovation activity is currently taking place Mondays – Saturdays between 9:00am and 5:30pm. Guests visiting during the renovation period have been enjoying special dining, spa and activity offerings. During the renovation period, the complete Kō dinner menu continues to be served nightly at Kea Lani Restaurant.
Kō, which translates to “sugarcane” in Hawaiian, is inspired by the many cultures of the sugarcane plantation era. The menu includes authentic Hawaiian, Chinese, Filipino, Portuguese, Korean, and Japanese menu items with an innovative twist. Many menu items are based on treasured family recipes passed down for generations to our colleagues and chefs.
The Latest (updated 1/4): January marks the unofficial countdown to the grand reopening. Everyone at the resort is buzzing with excitement as we watch the frames for the rounded seating banquets and circular bar take shape. The restaurant will have no walls (letting the tropical air in), but the floating roof is now finished, complete with ceiling fans and soft lighting.
We are also finalizing the many details that go into opening a new restaurant. Everything from new china to stemware to uniforms is being selected to reflect the plantation era-inspired design.
While the physical elements of Kō are taking shape, we are busy teaching, training and motivating our Kō team. Servers, bartenders, bussers and hostesses alike are preparing for the April reopening. They are having the chance to meet the farmers who grow the produce served at Kō and are having one-on-one time with the chefs to understand the preparation and technique of key dishes. They are also learning the family history and importance of recipes that have been passed down for generations. We’re making sure that when this restaurant reopens, the Kō team is armed with knowledge, history and most of all, heart.
The Future: Reopening in April 2012, the new Kō will feature contemporary design elements and décor inspired by the sugarcane plantation era. The new space will include a floating shaded roof, a dynamic action bar, built in seating banquettes and porcelain tile flooring. It will be Wailea’s newest hotspot for live entertainment and innovative plantation-inspired cuisine.
