Scratch Kitchen

Fairmont is committed to purchasing local, organic, Fair Trade and sustainable food products wherever possible, including utilizing organic or biodynamic wines, local purveyors and on-site herb gardens. The culinary operation at the Fairmont Pacific Rim operates a ‘fully scratch’ kitchen and is committed to creating everything in-house, allowing the chef’s to ensure every bite tastes exactly the way they want. Utilizing the freshest ingredients and minimizing the processing to deliver clean and clear flavours, products include all house-made condiments, sauces and pickling,  house-cured meats, smoked salmon and a full pastry kitchen of items the way ‘grandma used to make’.

The hotel is proud member of Ocean Wise, the Vancouver Aquarium’s conservation program created to educate and empower consumers about the issues surrounding sustainable seafood.  Wherever possible, the hotel serves Ocean Wise seafood. Working alongside the Vancouver Aquarium, we’ve created anOcean Wise package that reflects the organizations’ joint commitment to educating and empowering consumers about making sustainable seafood choices.

Great Canadian Shore Clean Up

The hotel  participates annually in the Great Canadian Shore Clean Up where over 50,000 volunteers come together to assist with Cleaning up the shorelines of the beautiful city of Vancouver.  2013 marks the 20th Anniversary of the Great Canadian Shore Clean up, now being recognized as one of the largest direct action conservation programs.

Giving Back

Our partnership affiliations highlight our commitment to the environment, and also help promote unique Fairmont eco-experiences. On a local level projects are tailored to address environmental issues specific to our location and showcase each unique environmental strengths and connection to the community, Fairmont Pacific Rim has partnered with the Stanley Park Ecology Society’s Eco-Innovations Signature Project, in support of their mission to promote awareness and respect for nature. This is done through initiatives in education, research and conservation.

Cycling in the City

We invite our guests to minimize their carbon footprint and reduce downtown traffic congestion, creating a greener, more sustainable city! Cycling is one of the ‘greenest’ and energy efficient forms of transportation - Members of the Fairmont President’s Club program receive complimentary BMW bicycle rentals while staying at Fairmont Pacific Rim. With many dedicated bike lanes, cycling is possible on many Vancouver streets. With the hotel situated directly across from the Sea Wall, and a quick trip to Stanley Park, the BMW bicycles make for a memorable experience while exploring the beautiful city of Vancouver!

Paper, packaging and garbage are a reality of our lives, and of any business. Fairmont has consistently cut these side effects of our operations. While effective waste management comes with challenges, such as operating in communities without recycling facilities, we continue to reduce and divert waste and identify other eco-friendly opportunities. Recently, the hotel has implemented iPad 2 devices in all 377 guestrooms, with the award-winning ICE (Interactive Customer Experience) technology, that is more than a virtual concierge – allowing guests to make spa reservations, order In-room dining, access guestroom controls, view all hotel menus, and much more. Most recently, the hotel has introduced a Mobile check-in service – providing an unsurpassed level of service, the check-in via iPads allows us to reduce an abundance of paper and divert waste as our guests review the folio directly from the iPad, make any changes and have a copy of their folio instantly emailed.
