The Fairmont San Francisco has appointed Executive Chef Andrew Court to head up the landmark hotel’s culinary operations, including its signature Laurel Court Restaurant & Bar and Tonga Room & Hurricane Bar as well as its banquets and catering departments. Prior to joining The Fairmont San Francisco, Court served as Executive Sous Chef at another celebrated historic hotel, The Fairmont Royal York in Toronto, Ontario.

Court strongly believes in being a hands-on executive chef, and can often be found working in the kitchen alongside cooks. He enjoys teaching and collaborating with his team to develop new dishes and techniques. As a trained beekeeper, Chef Andrew helped tend to The Fairmont Royal York’s famed rooftop beehives and garden, which were installed in 2008. He will continue to educate visitors about the importance of honey bees while utilizing their liquid gold through The Fairmont San Francisco’s own successful rooftop apiary, which consists of four beehives atop its 1,000-square-foot Culinary Garden.
Despite three decades of experience and varied roles throughout his career, Chef Andrew considers his own culinary education ‘a work still in progress’ and is eager to seek out Northern California’s bountiful harvests and add to his gastronomic repertoire.
Chef Andrew’s culinary leadership career began in his native Birmingham, England and kept him in the UK until 1990, when he took an opportunity to work in Cologne, Germany, followed by the island of Madeira. Next he headed to Bermuda, where he was employed by the famed Fairmont Hamilton Princess. In 1997, Court landed in Canada, working as Sous Chef at The Fairmont Algonquin Hotel in New Brunswick, before making his way to Vancouver. Court also held several executive positions including attending the 2006 Torino Winter Olympics, representing Canada and Jet Sports for their VIP guest attendees. He also oversaw a Vancouver casino’s $5 million food & beverage renovation in preparation for the 2010 Winter Olympics.
Court feels fortunate to have a job that fulfills multiple aspects of his lifelong culinary passion. He has been able to work with exciting chefs from Europe to the Caribbean while enjoying a multitude of local flavors and experiences in-between. Court’s memberships have included Chaine de Rotisseurs Canadian Federation of Chefs & Cooks, BC Chefs Association (for which he was named 2005 Chef of The Year), and Team BC - Tourism Vancouver Trade Missions - Chicago, Washington D.C., Amsterdam, Paris and London. He has also served on the opening teams for Safeco Field, Air Canada Centre and Westin North Shore, Chicago. Court’s accolades include Indigo Restaurant Vancouver – Readers Choice Gold – 2006, 2007, Café One, Vancouver – Best Casual Dining – 2001, Royal Chef Team Challenge - Royal Winter Fair – Silver – 2012, Bermuda Hospitality Hot Food Competition – Gold 1991, 1992, Silver 1993.
