Sonoma, April 05, 2013 Santé, the fine dining room at The Fairmont Sonoma Mission Inn & Spa, will re-open its doors on April 5, 2013, following the completion of an extensive renovation, led by California based KNA Designs.

“What made us one of the Valley’s most successful restaurants before the impressive renovation stays.  Guests will see their menu favorites coupled with a number of new seasonally inspired innovative offerings.  With the completion of the remodel, we aim to create a new exciting scene in the restaurant, the new Santé Terrace (slated to open the following week) and the new Lobby Bar (early July),” says Executive Chef Bruno Tison.

Chef de Cuisine, Andrew Cain will continue to lead at the helm of the kitchen and collaborate with Executive Chef Bruno Tison.  Both chefs remain steadfast in their commitment to ingredient-driven cuisine and have proudly designed a new spring  menu that reflects the style and “terroir” of Sonoma Valley. 

The dining room’s new sleek design respects the property’s minimalist design while maximizing the historic nuances and mission-style architecture of the storied Inn.  The enhanced incorporation of natural light and bursts of color promise to produce timeless aesthetics. Exotic woods, original flooring, local art, and contemporary furniture will complete the Wine Country inspired environment. The renovation also includes the addition of 56 al fresco, Santé Terrace seats, which will be unveiled the week of April 14, 2013.

Santé has earned a national reputation for outstanding food.  Literally meaning “to your health,” the restaurant is a celebration of innovative California cuisine and good taste. Guests enjoy a seasonal menu, in a warm and casual yet stylish setting. Designed to exude the California wine country experience, Chef Andrew Cain showcases the region’s abundant local products and world-famous wines. The menu reflects a commitment to sourcing ingredients locally and organically. The restaurant's Sonoma-centric wine list features boutique, limited production varietals and perfect pairings to complement Chef Cain’s works. The lauded dining room is a recipient of multiple designations including those bestowed by Wine Spectator, AAA Four Diamond and Zagat.
