Celebrate Julia Child's 100th Birthday at Fairmont Hotels & Resorts with Les Dames d'Escoffier

Julia Child’s 100th Birthday is Celebrated with Dinner Parties at Fairmont Hotels in the Pacific Northwest with Les Dames d ‘Escoffier Fundraiser, August 15, 2012


Most birthday celebrations include gifts, a cake, and candles, but on August 15 company will gather to honour someone they likely never met.  The day marks the 100th birthday of the iconic culinarian, author, and television host, Julia Child.  Fairmont Hotels & Resorts in the Pacific Northwest are among restaurants around the world who have partnered with Les Dames d ‘Escoffier to pay homage to her as well as raise funds and awareness for scholarships, the international internship program and outreach programs; Project Chef and Growing Chefs. 


The dinners are as one-of-a-kind as the woman who inspired them.  In Vancouver at The Fairmont Waterfront, the company’s first female Executive Chef Dana Hauser is setting a table for an al fresco experience on the roof top garden terrace with a menu that highlights the hotel’s home grown flavours.  Dishes include Beef “Bourguignon”, Waterfront-grown Rooftop Potatoes, and a Reine de Saba Dessert which includes berries grown poolside with White Chocolate & Waterfront Honey Crema. The honey is made at the hotel in their own honeybee apiary; a major player in the property’s long list of eco-initiatives.


At Fairmont Pacific Rim, the festivities take place front and centre at the chef’s table for the Provencal-style dinner created by Executive Chef Darren Brown with items like Pissaladiere (an anchovy and olive tart), Lobster Thermidor, Coq au Vin, Duck a l’orange with Orange Confit Ravioli, and a cheese course, n’est ce pas!


Diners at the castle in the city, Fairmont Hotel Vancouver, will be part of the ooh-la-la action as they take a seat in the show kitchen in 900 West display kitchen.  Quelle sélection!  Qualicum Bay Scallop St-Jacques Gratinéed with local Raclette, BC Halibut Meuniere avec Haricots Vert Amandine et Lemon Caper Sauce, Maple Hills Farm Coq au Vin with Wild Mushrooms and Lardons, and a dessert of Okanagan Apple Tarte Tatin.  

And at Fairmont Vancouver Airport, foodies can leave their passports at home as they enjoy views of the North Shore Mountains and runways from their sky seat in the private dining room on Fairmont Gold with classics avec un touch of nouveau; French onion soup with duck confit; Beef Tenderloin “Bourgignon" with house-made bacon; and Vanilla Crème Brulée. 


At The Fairmont Chateau Whistler, the evening gives a nod to the impact the noted chef made for women as restaurant chef Isabel Chung, dressed in pink, and a brigade of female wait staff serve a five-course menu to diners at a table set amidst, and featuring items from, the hotel’s fragrant herb garden.  


“Across the pond” guests will be pampered in the stately Empress Room at The Fairmont Empress in Victoria.  After some research, Executive Chef Kamal Silva chose to recreate some of Julia’s personal favourites with a contemporary splash for presentation.  His traditional French menu features Salad Nicoise, Beef Tenderloin Bourguignon, Chateau Potatoes and Chocolate Almond Cake.  Très bien!


At the Fairmont Olympic in Seattle, Washington it promises to be a très magnifique evening with an elegant table in the Olympic Presidential Suite which was most recently featured in the book, Fifty Shades of Grey!   The 3,000 square foot parlor features its own dining room, grand piano and views from the 11th floor.  The five-course French-inspired Northwest cuisine, prepared by Executive Chef Gavin Stephenson from The Georgian (a 20-year recipient of AAA 4 Diamond rating) includes Escargots Bourguignon et Brioche Melba, Coquilles St-Jacques et son Beurre de Caviar, Tournedos Rossini servi avec Ratatouille et Pommes Anna, La Planche à Fromage et gelée au Porto, and a Grand Mariner Soufflé et Cerises Rainier servi avec Sauce Anglaise.


Tickets are $69 per person and include a multi course dinner with wine that has been paired and donated by a producer to complement the Julia Child-inspired menu.  Additional alcoholic beverages and gratuities are extra.  Tickets can be reserved by contacting Les Dames d’Escoffier at or
