Chateau Whistler's Chef Bendig Offers Gold Medal Menu

 - Fairmont Readies for a Celebration of Canadian Cuisine - 

There really is no better time to celebrate the flavours of our vast nation than Food Day Canada (FDC) on August 5, 2017. Today Derek Bendig, executive sous chef at Fairmont Chateau Whistler, released his four-course Food Day Canada menu which celebrates the bounty of British Columbia’s ‘Sea to Sky’ region. 

 Food and wine connoisseurs will recognize Chef Bendig’s name from his recent appearance at the prestigious James Beard House in New York City. Bendig earned the right to represent Canada there after bringing home a gold medal from FDC’s Good Food Innovation Awards in 2016. Even the most discerning guests are certain to be satiated with his 2017 Food Day Canada menu.   

The four-course menu starts with BC’s signature salmon three ways delivered on puffed salmon skin then topped with fresh herbs from Fairmont’s own rooftop garden and a vinaigrette of spruce tips Bendig collected in the spring. Chef ensured oft-overlooked sprout seeds such as quinoa and lentils are spotlighted before the star of the show – Trio of Beef – makes an appearance. Pemberton Meadows beef, including 45-day dry aged ribeye, roasted bone marrow topped with braised short rib, and stuffed deckle, prove exactly why Canadian beef is world-renowned. Executive pastry chef Anup’s dessert, which is inspired by his morning walks along the river, offers a striking and innovative creation encompassing his new “Black Bear” chocolate.

  West Coast Salmon Tasting  
salmon tartare with rooftop herbs and crispy BC grown rice,  
cedar cured salmon with candied beet confit,  
salmon crudo with spruce vinaigrette,  
served on puffed salmon skin    

Sea to Sky Harvest Platter  
local potato, crudités vegetables, sprouted seeds, arugula dressing  

Trio of Pemberton Meadows Beef
Dry aged ribeye, braised short rib, stuffed deckle  
Garlic scape pistou, creamed corn, chanterelle mushrooms, garlic chips   

Cheakamus River Rock  
cedar-scented Chateau “Black Bear” dark chocolate,  
Saskatoon-pine compote, basil-pistachio air sponge  
and blueberry sorbet
