Binchotan | Opening Soon

The concept is centuries old. In ancient seaside villages throughout northern Japan, local fishermen gathered to grill their fresh catch over premium binchotan (white charcoal) and talk story well into the night. Perfecting a technique that produced charcoal of extraordinary purity, they used the extra hard Ubame Oak that grew in the forested hills of Kishu, carefully and sustainably choosing branch clippings, stacking them inside large kilns built into the mountains and then burning them at low temperatures over several weeks to control the oxygen flow.  

This communal style of cooking is considered a modern dining trend. And now we invite you to experience this culinary sensation offering Asian menu creations featuring locally sourced seafood, meats and vegetables. An exciting new bar will offer handcrafted beer and cocktails to complement the robatayaki (fireside cooking) cuisine. It's chemical-free, full of flavor and always family-style.
