A stellar addition to dining venues at Fairmont Jaipur, Aasma has been conceptualized to offer The Raj Era cuisine to discerning guests. The Raj Era refers to the time of British Empire held sway over India. Spanning almost 200 years this was the longest ruling phase that the British enjoyed in India. Jaipur’s tryst with the British Empire resulted in influences in art, architecture, culture and cuisine. Recreating dishes inspired from this era Aasma menu will see a host of delicacies that are derived from traditional British cuisine, such as roast beef, modified by the addition of Indian-style spices, such as cumin and red chillies. Fish and meat that are cooked in clay ovens or grills and finished with Indian tempering will also grace the menu. Dishes such as Col. Skinner Grilled Shrimp with Jalapeno Mayo, Masala beef with Chop salad and Liver Pepper Fry with Vinegar Onion are some of the signature offerings available exclusively for gourmands at Aasma.
