Fairmont Royal York Welcomes Executive Chef Robert Mills

Fairmont Royal York is excited to announce the appointment of Robert Mills as Executive Chef, effective January, 2016.  Mills, who will administer the direction, coordination and creation of all food preparation throughout the immense culinary department at Fairmont Royal York, brings extensive leadership and hospitality experience to his new role. 

Robert will oversee the hotel’s 6 dining establishments which include: Epic Restaurant and Lounge, Benihana Japanese Steakhouse, Library Bar, Piper’s Pub, York Station (a.k.a. Toronto’s smallest bar), and York’s Café.
Robert has competed in the Food Network Series, Chopped Canada in Season 1 as well as been featured on local television programs including Breakfast Television, and Canada AM.  His career in hospitality spans over many years, and offers an extensive list of national and international practice.

Our new Executive Chef joins our team from the University of Toronto – Aramark where he has held the position of Executive Chef since 2014.  Prior to this role Robert was the Food & Beverage Director at the Thompson Hotel Toronto from 2013 to 2014 and the Executive Chef from 2010 to 2014.  Additionally, he was with Hilton International Hotel in Toronto as a Sous Chef from 2004 to 2007, followed by Executive Sous Chef from 2007 to 2010.  Robert also has previous experience in a variety of distinguished hotels and restaurants in England, Tonga, British Columbia and New Zealand. 

Mills holds his Red Seal Certificate of Qualification in Professional Cookery which was completed in Wellington, New Zealand, and is also a member of the Food and Beverage Advisory Board at George Brown College.  Additionally, Robert is a member of Les Toques Blanches, Toronto Chapter.
