Claremont Club & Spa, A Fairmont Hotel
Arwi Odense oversees all food and beverage operations at Claremont Club & Spa including banquets, private dining, and Limewood Bar & Restaurant, Claremont’s signature restaurant. He began his career in 1998 as an apprentice at The Metropolitan Hotel Toronto and Hemispheres Restaurant and completed his apprenticeship and journeyman's papers under the tutelage of Chef Robert Sulatycky with Four Seasons Hotels & Resorts. His skills were then honed with Chef Michael Caines, Michelin Two Star in Devonshire, UK at the Royal Clarence Hotel. Odense joined Fairmont Hotels & Resorts in 2003 as Sous Chef at Fairmont Chateau Whistler. In 2006, he was appointed Banquet Chef at Fairmont Copley Plaza followed by Executive Sous Chef posts at Fairmont’s Vancouver Airport and Newport Beach hotels. In 2012, he was named Executive Chef at Fairmont Battery Wharf. Prior to joining the Claremont team, Odense held the position of Executive Sous Chef at Fairmont San Jose. A longtime Fairmont ambassador, Odense has dedicated his career to culinary excellence. He is inspired by local farm partnerships and proud to source the finest seasonal ingredients from Northern California. Odense credits his innovative spirit and culinary expertise to his mentors and is passionate about educating young chefs. When out of the kitchen, Odense enjoys exploring local farmers markets by means of motorcycle and adventure riding.
