Spring has sprung and Easter celebrations are on the menu at Fairmont Hotels.  In Vancouver, diners can choose from three delicious options.

For the groaning board of an Easter brunch, ARC at the Fairmont Waterfront has classic favourites and new traditions.  Dishes include hot cross buns from the hotel's bakery, blueberry crumble coffee cake, salads featuring local partners like Village Farms heirloom tomatoes and Oyama charcuterie.  Seafood lovers will adore the Haida Wild salmon, selection of clams, mussels, prawns, snow crab and California rolls. With an organic omelette station, eggs Benedict, a carvery with maple and mustard crusted pork, roasted leg of lamb, buttermilk fried chicken, roasted ling cod, braised local rabbit pot pie and bouquet of spring vegetables, there is something for everyone. For desserts, the pastry kitchen has created a selection of cookies, cakes, cupcakes, crème caramel and tiramisu shooters.  At the Kid's Table, small diners can munch on dips and crudités, party sandwiches and palate pleasers like pizzas, chicken fingers and mini burgers.  Fun food like house-made marshmallows, cake pops, jello, and banana cream pie (in mason jars) are alongside Easter eggs to decorating.  Served from 11:30 am to 3:30 pm, adults are $69, children $35. Reservations can be made at 604-691-1818.

ORU at the Fairmont Pacific Rim is the haute spot for Easter brunch and with the seawall a hop away, ideal for a post dining stroll. From eggs Benny to sugar bunnies, the company of friends and family can be enjoyed with must-not miss dishes like heritage chicken pot pies and maple bacon and ruyere quiche and sparkling Mimosas can be ordered to enjoy with the spectacular views. Served from 10 am through 3 pm, $55 per person. Reservations can be made by calling 604-695-5557.

At the Fairmont Hotel Vancouver, Easter celebrations start early with a special Afternoon Tea served on Saturday and Easter Sunday from noon 'til 3 pm.  Taste a wee bit of England with a selection of scones with Devonshire clotted cream and house-made fruit preserves, vanilla bean panna cotta with stewed rhubarb and brown butter crumble. Traditional finger sandwiches include smoked salmon and organic egg, curried free range chicken and the "must have" English cucumber and peppercress. Savory items like a devilled organic egg with caviar and Dungeness crab cake are also included with a sweet ending of pastries like Verona chocolate tartlet with gold flakes, salted caramel truffle, lemon macaroon, pistachio Madeleine and poppy seed pound cake.  Adults are $59 and reservations can be made by calling 604-662-1900.

And for a little hare on your chest, travellers flying in and out of the Vancouver International Airport can stop in for a Bunny Punch cocktail at Jetside Bar in the Fairmont Vancouver Airport
