Featuring eight interactive kitchens specialising in six influential cuisines from India, Thailand, Japan, China, Europe and the Middle East, guests can enjoy a truly international dining experience in a number of authentic settings, from the privacy of an intimate dining room to the bustling ambiance of the showcase restaurant.
The first in the city to popularise Friday brunch over five years ago and in our ongoing effort to innovate this award winning culinary institution, guests can now enjoy three brunch experiences:
BRUNCH IN THE CITY
‘Hops and Vines’ Brunch
The introduction of the new ‘Hops and Vines’ brunch showcases a full range of culinary feats, including a delicatessen room with fine international cheeses and Port wines, an ice bar stocked with freshly shucked oysters in the half shell, traditional roasts, king crab legs, lobster and crispy Peking duck. Priced at AED 395, this option also offers a selection of red and white wine, martini station, refreshing mojitos, a selection of draught beers, mocktails and fresh juices.
'Premium Bubbly’ Brunch
The original ‘Premium Bubbly’ brunch includes all of the above, plus unlimited pourings of Moet & Chandon French Champagne for AED 550.
'Non Alcoholic’ Brunch
The ‘Non Alcoholic’ brunch features all the culinary offerings listed above, plus a selection of creative mocktails and fresh juices priced at AED 295.

Enjoy endless Sushi and Sake every Wednesday for just AED 150 per person.
Experience the creations of Spectrum on One's master chefs and enjoy unlimited servings of a wide selection of sushi, maki, and teppanyaki, and in true Japanese style enjoy them all paired with bottomless sake.

WHOSE WINE IS IT ANYWAY?
Join our sommelier team for a fun evening of cheese and wine tasting on the last Tuesday of the month for just AED 185 per person. Learn about a selection of 4 grape beverages and guess which expert is correct and you could be enjoying your favourite bottle on the house later the same evening over dinner.
This offer is valid on the last Tuesday of every month and cannot be combined with any other offer. AED 185 includes four glasses of grape beverages and a selection of artisan cheeses. THE ULTIMATE VALENTINE'S PACKAGE
This Valentine's Day, one couple can revel in the ultimate Valentines’ experience. Be whisked away from your home in a luxurious Rolls Royce and transported to Spectrum on One at the Fairmont Dubai.
Enter the romance inspired private dining room for two, while Chef de Cuisine Fabio Pineda meets with you to discuss the sequence of a decadent six course dinner paired with selected high end vintages, beginning with a bottle of Dom Perignon Rosé to whet the appetite.
