Biography - Chef Christopher Chafe
From the sunny beaches of Southampton, Bermuda, to the Rocky Mountains of Jasper, Alberta, Chef Christopher Chafe has been appointed Executive Chef for the Fairmont Jasper Park Lodge. Chef Chafe has recently taken the lead at the hotel’s restaurants; Cavell’s Restaurant & Terrace, The Moose’s Nook Northern Grill, Emerald Lounge and Patio, as well as overseeing banqueting, in-room dining and all food and beverage operations at the hotel.
For Chef Chafe, Jasper’s abundance of outdoor adventure activities and proximity to local farmers and producers is a dream. “I enjoy creating innovative and rustic meals that feature fresh, local ingredients,” says Chafe. “Having access to some of the world’s best farmers is both exciting and inspiring to me.”
Hailing from the South of England, Chef Chafe discovered his enthusiasm for cooking quite by accident; “I was never great with woodworking, so my grade school teacher advised me that home economics were a better option!” The only boy in a class of 32 girls, Chafe instantly fell in love with cooking and hasn’t looked back. Chef Chafe began his culinary career with a traditional apprentice at country hotel in the South of England in 1980. While training to become a chef, Chafe enrolled in the British Territorial Army cooking for the catering corps and was quickly promoted to Lance Corporal. Chafe then moved to London to work as a Chef at The Portman Inter-Continental Hotel and several fine dining establishments before taking the Executive Sous Chef position at the Grand Hotel Europe in St. Petersberg, Russia in 1992. In 1997 he became the Executive Chef at The Sheraton Nevskij Palace Hotel in St. Petersberg before moving on to Jurys Ballsbridge Hotel in Dublin in 2000 and The Imperial Hotel in Torquay, England in 2003. In 2005, Chafe became Executive Sous Chef at The Fairmont Southampton before being promoted to Executive Chef in 2006.
When not in the kitchen, you can find Chef Chafe gardening, golfing or spending time with his family. Chafe, and his Canadian wife Kim (also a chef), have an 11 month-old daughter that will experience her first winter here in Canada.
