Executive Chef Tylun Pang leads the culinary masterpiece of Kō restaurant in Wailea, the only fine dining restaurant on Maui to offer cuisine inspired by Hawaii's sugarcane plantation era. Located at The Fairmont Kea Lani in Wailea, Ko features island family recipes and includes farm-fresh Hawaiian, Chinese, Filipino, Portuguese, Korean, and Japanese menu items.

March Winemakers Pairing
Kō is proud to offer Winemakers Pairings, a prix fixe three-course menu comprised of Executive Chef Tylun Pang’s favorite dishes, paired with three stand-out wines. March will feature a glass of Mer Soleil 2012 “Silver” Chardonnay, followed by a Caymus 2011 Napa Cabernet Sauvignon and finishing with a Caymus 2012 Conundrum Proprietary White Blend. The menu will begin with Kō’s popular Portuguese Bean Soup, followed by Chinese style Rack of Lamb served with Scallion Ginger Mashed Potatoes and Hoisin Demi Glaze. The three course dinner will conclude with a Caramelized Pineapple Buttermilk Cake, made with Maui Gold pineapple.
Saint Patrick’s Day: Monday, March 17
This St Patty’s Day, indulge in Irish favorites with a Hawaiian flair, at Kō. Look for a corned beef sandwich on rye with house-made Bikini Blonde beer mustard and pineapple coleslaw, Polynesian corned beef Lau Lau with coconut milk, and a traditional corned beef and cabbage. Treat yourself to two special Irish desserts, a Guinness Float with a scoop of locally made coconut gelato or a Chocolate Trio with a Bailey’s pot de crème, mint macaroons, and a shamrock white chocolate covered strawberry.
Sunday Night Laulau
Enjoy a healthy and modern take on a traditional Hawaiian dish, every Sunday evening at Kō. The special seafood laulau includes Maui fresh catch fish, shrimp, scallops, spinach, mushrooms and baby bok choy, all wrapped in ti leaf, steamed, and served with jasmine rice. Experience the ultimate romantic dinner in a private cabana on the Adult Pool deck, adjacent to Kō. The four-course dinner features favorites from the Kō menu, wine pairings and a private server.
