(June 6, 1924, eight years after prohibition, the ‘new’ Alberta Liquor Control Board issued License No. 1 to the Palliser Hotel, making it the first licensed hotel in Alberta.) 

Inspired by yesterday’s Palliser Hotel and the authenticity of the 1920s, the Rimrock Dining room invites you back to try Fairmont’s authentic luxury cuisine with the taste and feel reminiscent of the mad men-era, and the ‘golden-era of travel.’ The Rimrock is open for service Thursday, Friday and Saturday evenings in the historic room revived with prohibition-themed décor. Enjoy the hand-tooled leather pillars and famous heritage fireplace. From the Palliser Honey and Bourbon-glazed House-smoked Brisket to the Truffle mac n’ Cheese with Lobster or the challenge of you and your date to devour the tender and flavourful 48-oz Tomahawk steak, you will return to the true age of decadence and glamour. The finale, the house-made desserts with a modern twist; Carrot Cake Verrine, Banana Cream Pie and Saskatoon Berry Crumble fashioned in mason jars with lids make them perfect ‘to go’ delicacies to the Campfire S’more Trio for Two.

Add big-band swing jazz music and a Palliser 100 cocktail from the signature collection of hand-crafted creations to select beer, whiskey or bourbon, you’re off to an unforgettable dining escape.

Hours of Operation

Breakfast: Seatings available daily from 6:30 until 11 a.m.  Full buffet $31/person, continental $24/person

Lunch: Closed (options for private events.)

Dinner: Seatings available Friday and Saturday evenings from 5:30 until 9 p.m.

Sunday Bubbly Brunch: Sunday brunch is back, but bigger, better and bubbly... Available from 11 a.m. with the last seating at 2:30 p.m.

Valentine's Weekend: Saturday, February 13 and Sunday, February 14, there will be romance in The Rimrock with a five-course menu and wine pairing option and for a lighter-love affair, enjoy our famous Death by Chocolate dessert buffet in The Oak Room Lounge.
