INTRODUCING DINNER DINING DEDICATED TO 1916-1924 

(June 6, 1924, eight years after prohibition, the ‘new’ Alberta Liquor Control Board issued License No. 1 to the Palliser Hotel, making it the first licensed hotel in Alberta.)  

Inspired our iconic Palliser Hotel history and the authenticity of the 1920s, the Rimrock Dining room invites you to try Fairmont’s genuine luxury cuisine with the taste and feel reminiscent of the ‘golden-era of travel.’ The Rimrock is open daily for breakfast and offers dinner service Thursday through Sunday evenings in a historic room revived with prohibition-themed décor. You’ll be blown away by the hand-tooled leather pillars and famous heritage fireplace. Our brand new menu created by Executive Chef, Eraj Jayawickreme, is sure to please too. Indulge in our Feta-encrusted Lamb Sirloin paired with confit shallots and warm quinoa salad, the delicious Chardonnay-brined Half Chicken or the classic and succulent Alberta Beef Tenderloin accompanied by Horseradish Pomme Puree and roasted mushrooms. The finale, house-made desserts with a modern twist will leave you wanting more, most notably, the delectable Melting Chocolate Sphere filled with lemon curd, black pepper sponge and raspberries.

Add big-band swing jazz music and a cocktail from the signature collection of hand-crafted creations to select beer, whiskey or bourbon, you’re off to an unforgettable dining escape.

Breakfast: Seatings available daily from 6:30 until 11 a.m.  Full buffet $31/person, continental $24/person

Lunch: Closed (options for private events.)

Dinner: Seatings available Thursday through Sunday evenings between 5:30 until 9 p.m.

Sunday Brunch: All your classic brunch favourties and some new ones. Offered from 11 a.m. until 2 p.m.
