Fairmont Palliser has installed aerating, low-flow showerheads in 90% of the hotel’s guest rooms, reducing water consumption by 3.7 litres per minute.
In another water conservation initiative, Fairmont Palliser has replaced four water-cooled ice machines with more efficient air-cooled models, saving an average of 14 litres of water per ice bucket produced.

Technology Driven Food Waste Reduction
Through the use of the Orbisk food waste monitoring system, we are able to track, measure, and analyze food waste patterns across our culinary operations. These insights help our team make informed decisions, improve efficiencies, and reduce unnecessary waste. In 2025, our efforts contributed to a 10% reduction in food waste. In Q1 2025 alone, Fairmont Palliser reduced food waste by 40 grams per guest compared to Q1 2024, resulting in a total reduction of 1.4 tonnes.
Our sustainable engagements
Fairmont Palliser’s two honeybee hives contribute to local pollinator support while providing approximately 80 kg of honey each year. From hive to table, the harvest is used across our food and beverage offerings.
Since 2022, Fairmont Palliser has eliminated all guest-facing single-use plastic items, helping reduce waste while advancing more sustainable hospitality practices.
