Geoffrey Carkner- Fairmont Vancouver Airport's Executive Chef
On April 18 2012, Geoffrey Carkner joined The Fairmont Vancouver Airport as Executive Chef. Carkner began his culinary career at the Renaissance Vancouver Harbourside in 1997. Since then, he has worked at several properties in Australia and most recently joined Fairmont in 2008 as Executive Sous Chef at The Fairmont Hotel Vancouver.
Carkner believes that “Classics are classics for a reason,” yet likes to put a modern spin on his dishes, playing with flavours, textures and presentation.
He is passionate about leading Globe@YVR's culinary team and enjoys guiding The Fairmont Vancouver Airport's initiative programs such as the popular “Garden to Globe” menus that feature local ingredients harvested from the Terra Nova garden, the hotel’s honey program, and “Growing Chefs” which teaches children about urban agriculture.
