Sip and Savor with Hotel Culinary Classes

Kiwi Collection recently did a round up of the best hotel culinary classes, and our Sips to Sushi Package was included in the feature. The package includes a sushi making class in the RawBar, the city's first 100% Ocean Wise sushi destination and a cocktail making class in the Botanist Bar with Vancouver's top bartenders.

We are pleased to share that Botanist was recently named one of the world’s top new bars in the annual Condé Nast Traveller UK 2018 Hot List, a luxury travel magazine. The Hot List shares a compilation of editor picks of the world’s best new hotels, bars, restaurants, and beach clubs to have opened in the last year. Botanist was the only Canadian choice amongst eight other international cocktail bars.

“Sunshine and rain (gin and kombucha) is one of the relatively simple amuse-bouche cocktails served before main-course drinks at this bar. These whimsical concoctions are created in a glass-fronted laboratory and emerge in almost sculptural compositions. The Pretty Bird is a glass bird on a nest; the Deep Dove is mounted on driftwood. The Cocktail Lab shares its name and space with a restaurant and the vibe is demure, with soft grey and rose-gold seating providing a calming backdrop for watching the team whizzing up wild and wacky cocktails.”

We are thrilled to announce that Botanist was recently recognized within the Wine Spectator’s 2018 Restaurant Awards, with an Award of Excellence.  The Award of Excellence recognizes restaurants whose wine lists offer interesting selections, are appropriate to their cuisine and appeal to a wide range of wine lovers. Over 3,758 restaurants, located in all 50 states and over 75 countries and territories, were honoured this year for having outstanding wine lists. The awards are listed in three categories: Award of Excellence, Best of Award of Excellence and Grant Award.

Botanist was awarded the Award of Excellence for its extensive and terroir-driven list of vintages and appellations, curated by the Fairmont Pacific Rim’s resident Wine Director, Jill Spoor.

“While developing the Botanist wine program, it was my goal to create a boutique list, with quality driven wines that express a true sense of place,” comments Jill Spoor, Wine Director. “It is an honour to bring together a list of special wines and exclusive labels that highlight wineries that practice sustainable, organic or biodynamic farming and winemaking. Each maintains a serious level of commitment to distinctive environmental practices, which is reflected in the purest expression of their wine.”
