Introducing The Curator's Table, overlooking The Lobby Lounge a new table for eight dinner guests dedicated to the art of great conversation, fueled by food and wine. An evening experience that illustrates the power that food has to connect people together.  

Continuing with our culinary philosophy of sourcing only the best products available for our guests, giovane café is taking coffee to new heights with the introduction of Stumptown Coffee Roasters. Founded in Portland, OR in 1999, they are known for pioneering the idea of working directly with coffee farmers, providing a transparency in the ‘supply chain’ and rewarding farmers on the quality of the bean produced. Guests can experience a culinary journey of the senses within Fairmont Pacific Rim’s dining destinations.  Visit ORU to savour food of the Pacific Northwest with flavours of the Pacific Rim. giované cafe + eatery serves up signature roasted coffee, decadent pastries and savoury lunchtime fare by day and turns into an all-Italian eatery by night, offering  salumi, formaggi and signature pastas, perfectly paired by the all-Italian wine list. The new addition to giovane café + eatery is ‘the market’ that takes foodies around with world, sourcing the finest handcrafted products from British Columbia, Italy and house made products straight from our ‘scratch’ kitchen. The Lobby Lounge + Raw Bar is a hot spot from noon till night with live music seven days a week, carefully crafted cocktails,rave-worthy sushi from the newly enhanced Raw Bar, and even a signature afternoon tea with an Asian twist to the traditional classic. 

On November 13, 2014, the Apprentice Dinner saw our aspiring apprentice chefs from Fairmont Hotels’ Pacific Northwest Region make their debut in front of a sold out crowd. Guests in attendance savoured the flavours reflective of Canada’s most celebrated cuisine, as each hotel was tasked with creating three tapas to match a notable region, on a cross-Canada journey of east meets west. Highlighted regions included: Atlantic Canada, French Canadian, Cottage Country, The Prairies, The Canadian Rockies and BC.
