Our sustainable engagements
We have removed single-use plastics from the guest experience wherever possible, with filtered water and reusable glass bottles in place of plastic. In our kitchens, high-temperature dishwashing systems sanitize with heat rather than chemicals, reducing sanitizing agents in wastewater and the plastic containers they arrive in.
In a city that leads the nation in water stewardship, we pursue measurable annual reduction targets through a property-wide program: submetering of major water systems, active leak detection, cooling tower upgrades, and irrigation shifted to nighttime hours with watering adjusted to soil conditions. In our kitchens, pedal-operated fixtures and basin-wash training conserve water with every service.
Our culinary team sources weekly from the celebrated Santa Monica Farmers Market just up the street, shaping menus at FIG around local produce, sustainably sourced seafood, and plant-forward dishes. In every dining outlet, discarded food is weighed and measured, with a standing goal of keeping food waste below 151 grams per cover, and a composting program returns organic waste to the earth.
Our conference services team holds the Events Industry Council's Sustainable Event Professional Certificate, designing meetings and celebrations that minimize waste and environmental impact, so that gathering beautifully and gathering responsibly are one and the same.
Guests arriving by electric vehicle are welcomed with complimentary charging stations on site, subject to availability. It is a simple gesture with a lasting effect: every charge supports a cleaner drive along the California coast.
