Fairmont Waterfront is proud to introduce, Waterfront Cinema Presents – a new cinema and dining experience that will bring some of Hollywood’s most beloved films to life. Through themed décor, inspired culinary experiences, and iconic films, guests will be invited to step beyond the screen and become part of the story itself.   Join us on Friday, November 13th, with a screening of the iconic Mamma Mia! – paired with the flavours of a traditional Greek taverna. Channeling his Greek roots, Fairmont Waterfront’s Executive Chef Harris Sakalis has crafted a 4-course menu, served throughout the film, that will blend time-honoured Mediterranean dishes with the finest ingredients of the Pacific Northwest’s harvest.  

This month’s Province to Plate celebrates the bounty of B.C. — from ocean to orchard. Begin with local wild salmon alongside sweet Ambrosia apples and grapes, a dish that speaks to the coast’s fresh abundance. Tender lamb wrapped in vine leaves will follow, paired with an earthy mushroom caramel, a true reflection of the valley’s rich farmlands. Finish with a warm apple tart showcasing the best of B.C.'s harvest, accompanied by a salted caramel gelato.
