During the Spring of 2019, Stéphane Modat was awarded the title of Chef of the Year at the Les Lauriers de la gastronomie québécoise gala.

 

 

Born in the south of France and settled in Quebec City for over 10 years, Modat is an accomplished chef. He has been at the stove of prestigious Michelin-starred restaurants in Europe. When he arrived in Quebec City, he worked first with Yvan Lebrun at L'Initiale restaurant, then founded the famous Utopie restaurant and joined François Chartier for numerous creative projects.

 

  Since 2013, Stéphane Modat has been the Restaurants Chef at the Fairmont Le Château Frontenac where he revisited the institution's menus. In April 2015 he was inducted as Maitre cuisinier de France. He is also the author of several cookbooks, including Cuisine de chasse, his latest book in which he shares his passion for hunting.

 

Nature lover, Stéphane is a hunter and a seasoned fisherman. His outings in the great outdoors, especially in Quebec's Far North, allow him to discover the know-how and traditions of other cultures and revisit them on his terroir-inspired menus.

 

Head of the new generation, Modat is creative, sensitive and surprising: he dares several combinations of ingredients thus giving a true uniqueness to his cuisine. Heir to a great culinary tradition, his cuisine is nevertheless as surprising as modern. Innovative and true to his illustrious compatriot Samuel de Champlain who gave his name to the restaurant where he creates: Stéphane Modat explores. His ultimate goal is to provide each guest with a complete and intense taste experience.
