Fairmont Pacific Rim’s RawBar Becomes Vancouver’s First 100 Per Cent Ocean Wise™ Sushi Destination

The RawBar, tucked into the Lobby Lounge of Fairmont Pacific Rim, has been named the city’s first 100 per cent Ocean Wise sushi destination by the Vancouver Aquarium. Since The RawBar made its debut in 2013, it has been become renowned for its innovative presentation and quality of ingredients – a must-dine for the sushi-savvy.

Determined to make only responsible and sustainable seafood choices, Executive Chef Darren Brown and his team creatively source only the best of Ocean Wise-recommended seafood found locally and around the Pacific Rim. “Our relationships with local fishermen and our passion for sustainability made for a seamless transition," said Brown. "We believe our efforts will contribute to a healthier ocean, and ultimately ensure our children grow up enjoying the seafood that we do today.”


Sushi Chef, Takayuki (Taka) Omi, has spent a decade honing his skills, and leads the RawBar team that is passionate about the art of sushi-making and educating diners on the ongoing sustainable seafood practices, while providing an exceptional dining experience.


Open from lunch ‘til late, The RawBar features signature oishii items from the newly enhanced menu, bringing complete four-course lunches, donburi bowls, bento boxes and RawBar’s own sushi rolls to the table. The team also recommends 'Omakase' (chef’s choice) - a ‘surprise and delight’ element that enables the chefs to create a unique presentation which can include daily features, new items or foodie favourites.
