Menu:Rotating Buffet Menu -- Another Reason to Rise and Shine
Day One: Paniolo/Upcountry Buffet
This menu highlights the Spanish and Portuguese flavors to celebrate the history of Spanish cowboys brought to our island in the 1800's to work on Parker Ranch just north of us up the hill in Waimea town. Not long ago, Parker Ranch was the largest privately held cattle ranch in the United States. A few items of special flavor include:
- Baked Portuguese Sweet Bread French Toast
- Scrambled Eggs with Chorizo Sausage
- Slow-roasted Arroz con Costra chicken stew with Portuguese sausage, rice and egg
- Smoked Salmon and Serrano Ham
- Healthful Vegetarian Burrito with salsa Verde rolled in a fresh spinach wrap
At the omelet station, in keeping with the day's theme, choose from Portuguese sausage, local Waimea tomatoes, Hamakua mushrooms, Maui Onion and local goat cheese rolled into your creation.
Day Two: Big Island - Locally Inspired, Hawaiian Regional
This menu focuses on local Hawaiian Regional Cuisine and the flavors from our Big Island's diverse meats, fruits and produce offerings. With 11 different climate zones here, our chefs are pleased to offer healthful locally grown items on a daily basis.
- Big Island Baby Greens with Mango Vinaigrette and local edible flowers
- Lowfat Musubi's (local favorites)
- Seasoned dried beef we call Pipikaula, Char Siu Pork and Big Island Goat Cheese
- "Loco Moco" on the omelet station which consists of a beef patty atop steamed rice with a fried egg, grilled Maui onions, gravy and a fresh aioli
- Taro Pancakes with Local Honey, Macadamia Nuts, Papaya Compote and your Choice of Coconut Syrup or 100% Maple Syrup
Day Three: Kohala Coast - Coastal Theme, Locally Inspired
Oceanfront on the Kohala Coast of the Big Island's western shore, this menu focuses on our location -- the sunniest part of our Big Island and 20 miles long. In this area a century ago, called Kalahuipuaa, the ancient Hawaiians gathered to feast and celebrate.
- Smoked Marlin with Watercress, Avocado and Horseradish Dressing
- Smoked Lemon Pepper Salmon
- Fresh Island Poke (raw fish cubed and generously seasoned)
- Rock Shrimp Gazpacho
- Seafood Quiche
- Waimea Corn and Crab Cakes with a Hawaiian Remoulade
- Baked Seafood Breakfast Paella
