Fairmont Olympic Hotel Celebrates the Extraction of Honey from it's Rooftop Apiary

THIS AUGUST, ENJOY HONEY FROM CHEF GAVIN STEPHENSON'S ROOFTOP APIARY AS IT IS HIGHLIGHTED IN SPECIALTY DISHES, AND TRY THE NEW SEATTLE CIDER CO. HONEY CIDER  

 
In late July, Chef Gavin Stephenson will extract the honey from his fifteen beehives perched atop the Fairmont Olympic Hotel, predicting a harvest of up to 600lbs. To celebrate, Stephenson will be featuring a special five course prix fixe dinner throughout the month of August in The Georgian Restaurant. Each course of his Extraction Menu will highlight this unique urban honey in some way, from his Roots Salad with ‘Products of the Hive’ to his Lamb Chopper Cheese with Honey Pickled Cherries.

 

Additionally, Fairmont Olympic is excited to team up with Seattle Cider Company to launch a honey cider collaboration. Using honey from Stephenson’s hives and a variation of Seattle Cider’s Semi Sweet recipe, Seattle Cider Co. will create a honey cider with subtle nuances of Stephenson’s urban honey.

 

Dubbed Olympic Honey Cider, this hard honey cider will be available by the bottle at Fairmont Olympic Hotel in both Shuckers and The Terrace Lounge. Also throughout the month of August, diners at The Georgian can choose to pair the Olympic Honey Cider with the special five-course Extraction Menu.
